Abstract

Bacterial contamination on cabbage (Brassica oleracea) may have many sources, including soil. containers for tran~portation, air and environment surroundings the markets. Moreover, cabbages could have bacterial contamination from their contacts with processing equipments. The objectives of this ~1Udy were to determine density and diversity of bacterial contaminants on cabbage during harvesting and distribution. Additionaly. haw washing treatment could reduce bacterial population before comumption of cabbage as salad was also established Cabbages were taken from agri('ultural land at the Bantir vii/age (Losari, Sumowono. Semarang) and from 3 markets, i. e. Sumawono. Jimbaran and Johar. Total Plate Count (TPC) of bacteria lVas determined using the pour-plate metho with Nutrient Agar medium. TPC calculation were done for all cabbage samples from the agric;ultural and markets. Corre~pollding me~urements were also done all 'samples of sliced cabbage after washing treatments using tap water (0, 3, and 6 hour~~. Bacterial identification was done based all Bergey's Manual of ::'y~1ematic Bacteriology. The highest density of bacterial population lVas obtained from market 3; whereas the ~awest density was found in slieed cabbage right after the w~-hing treatment (0 hour). Bacterial densities found in samples from all treatments was ~1i1l belaw the standartb· (Shapton & Shapton, 1998). Most dominants genus found in cabbages from all treatment~· were Enllinia, follawed by Escherichia. Clostridium and Bacillus. Escherichia has lawer density than Enllinia. ClostTcidium was found only in cabbage right after washing treatment (0 hour), whereas Bacillus was fouiid in cabbage 3 aiuJ 6 hours after wasning.
