Abstract

One of the biggest retail markets in Indonesia is IR group. The development of fast food or ready to eat food in retail industry cannot be separated from the used of plastic as a food container, packaging, and utensils (such as, spoon, knife, fork, and straw). However, the developments of plastic design for food packaging also become a serious environmental problem, due to accumulation of single use plastic waste, and the risk of climate change. Therefore, there is urgency to estimate the contribution of food service outlet (retail market) in Semarang’s waste stream and the environmental burden expressed as carbon footprint. In this study, retail markets in Semarang are distinguished into two, i.e., point (IP) and hybrid (IH). IP and IH generated 635 and 300 SUP waste items per day. In terms of weight, more than 3,600kg and 1,700 kg of SUP waste per year was generated by IP and IH, respectively. More SUP wastes were produced during the weekend 0.4% and 42.9%, respectively for IP and IH. IP produced twice as much as SUP wastes that of IH in term of weight. PET is the most generated SUP waste by both IP and IH, followed by PS, HDPE, PVC, PP, and LDPE. Out of 11 food categories, there were two predominant contributors of SUP waste, i.e., water and tea (others-nonalcoholic beverages), especially for PET, HDPE and PVC. Snacks and sweets contributed the least SUP waste, limited to PET and PP. For LDPE the largest contributor was fruits. Bread, grains, and cereal products were the largest contributors of PP and PS. The amount of carbon footprint (CF) depends on the weight of the polymer (kg), total number of dine in visitors, conversion coefficient for each type of polymer. The CF values of 8.544 and 4.072 kg CO2 eq, respectively, produced by IP and IH stores in Semarang. To reduce CF emission 3R principles, including reduce, reuse, and recycle can be applied. Replacement of petroleum-based polymers with bio- based and biodegradable polymers, become one of the other alternative choices, for example using poly lactide acid (PLA) polymer.
