Abstract

Prisoners are a group of people who commit a certain crime that violates the law and is fostered in a correctional institution. Even so, they also still have their own rights. One of them is to get proper health and food services, considering that activities carried out by prisoners also consume a lot of energy. Therefore the existence of adequate and balanced nutrition is very important, by fulfilling regular food needs. In fulfilling regular food needs not only from the aspect of quantity or the amount food is consumed, but also from the aspect of quality or nutritional diversity of food. However, this teory is still not widely realized, so mostly people only focus on the amount they consume, not on the diversity of food itself. Determination of the quality of food consumed can be done by applying the Desirable Dietary Pattern’s score (DDP). DDP itself is an instrument that is often used in determining the value of the condition of food consumption in community related to the level of food diversity, which is usually expressed in the form of a DDP score. Therefore, this study was conducted with the aim to determine the level of food ingredients diversity consumed by prisoners as well as to determine the consumption level of prisoners in the Class IIA and IIB Correctional Institutions in Kendal Regency using the Desirable Dietary Pattern’s standard. The research method used was conducting a survey at the Class IIA and IIB Correctional Institutions to obtain data on the food consumption level of prisoners in the form of a daily food menu, food ingredients data, and the proportion of each food ingredient. From the two Correctional Institutions in Kendal, it was found that the data on the menu of food consumed was the same, because it had been regulated by the Ministry of Law and Human Rights. From the data obtained, it will be further grouped into nine food groups that are in accordance with the Desirable Dietary Pattern’s standard (DDP) to help the calculation of the DDP’s score. The results showed that the level of energy consumed by the prisoners was 2369.70 kcal. This result can be said to be very sufficient when compared with the specified Energy Adequacy Ratio which is equal to 2150 kcal. It was also found that the DDP’s score at the Correctional Institutions was 72.33. The score obtained is still relatively low when compared with the DDP’s score at the Regency, Provincial and National levels which is 84.80; 86.41; and 88.00. The overall results obtained also show that the Ministry of Law and Human Rights in implementing the food menu for correctional institutions has fulfilled in terms of quantity or energy adequacy, but in the aspect of quality based on Desirable Dietary Pattern or diversity of food ingredients are still insufficient.
