Abstract

Street food is termed as food/beverage which are sold in public places, and prepared at honle or at stall. There are several kind of street beverage that have risk as disease s.preader, one of them is dawel ayu which contain 0/ coconut rnilk and sold at street food stall. The aim of this study is to evaluate bacterial contan1inatio11 level in dawet ayu ji'om several sellers in Senlarang. Sanzples \-t-'ere collected from 3 sellers with dtfJerent location and sampling time. l11ey were dawet ayu and it's compnnent (cendol. coconut milk, ice cubes, and brown sugar syrup). The analysis covered total plate count (TPC) using Nutrient Agar (NA) mediunz and the number of Escherichia coli bacteria using selective medium Mac Conkey Agar. The re.\·ult of the study revealed that the number o/TPC and the number ofE.eoli in dawet ayu on street vendors is higher ([PC 5,27 -- 6,30 log efu/m! and E.eoli 4,30 ·· 5,35 log cfuiml) than the one of the ,""ide street sellers (TPC 5,25 -,·,6,21 log elu/ml and E.eoli 4.40 - 5,24 log elulm!) and the indoor sellers (TPC 5,27 - 6,14 log cfu'ml and "E. coli 4,34 - 4,791og elu/m!). The number of TPC, E. coli and non coli were increased in every salnpling time and the highest level showed at 4.00 pm. Dowet ayu component that showed the highest level of TPC were cendol and coconut milk. There was no correlation between location wit l 1:JC, but fPC dawel ayu had correlation with salnpling lime.
