Abstract
Toffe merupakan suatu produk olahan yang teksturnya dianggap sangat penting dalam menentukan kualitas keseluruhan produknya.pada penelitian ini digunakan 4 merk toffe. penelitian ini bertujuan untuk mengetahui variabel-variabel yang penting dalam tekstur toffe, mengetahui hasil korelasi antara pengujian tekstur toffe secara subyektif dan objektif.selain itu,penelitian ini juga bertujuan untuk menentukan karakteristik tekstur toffe yang disukai konsumen.
