Abstract
Turmeric (Curcuma domestica Val.) is a herbal plant that is widely developed and cultivated in Indonesia. There are many functions of turmeric, i.e: traditional medicines, cooking ingredients and as coloring agent. Turmeric has many chemical compounds, including essential oil, curcumin, desmetoxycurumumin, bismethoxycurcumin, resin, oleoresin, fat, protein, calcium, phosphorus, and iron. Therefore, turmeric can be used as an anti-inflammatory, antidiabetic, anticarcinogenic, antioxidant, anticoagulant, antibacterial, and antihypertensive. Turmeric is known to have high water content so it has a short shelf life. In this research, drying of turmeric is done until the water content reach less than 7% to avoid the growth of microorganisms and to extend its shelf life. This research was conducted using the Modified Solar Tunnel Dryer (MSTD) which is equipped with LPG gas stove as a heat source to improve the final quality. The Modified Solar Tunnel Dryer (MSTD) can be used when the weather is less supportive for drying with sunlight, so in this research MSTD can be used as an alternative source of heat if the heat is insufficient. This drying method have a weakness which is lack of efficience of gas consumption because of heat leak through tool surface. The purpose of this research is to determine the effect of the addition of asbestos on MSTD on the efficiency energy used on dried turmeric. The results show that the addition of asbestos can become isolator to hold the leak of heat in the stove, produce more stable temperature, and reduce gas use by 50% from data of gas use before the addition of asbestos. Also, it was found that the addition of asbestos had no effect on water activity, moisture content, curcumin content, antioxidant activity and color intensity in dried turmeric samples.
