Abstract
Contemporary food and drinks are growing, one of which is because of social media and the internet that spread to various teenagers and adults. Age differences are thought to cause different perceptions of color and taste in food and drinks. The aim of this study is to know consumer acceptance on color deviation in fruit-flavored jelly based on consumers' perceptions of ages 17-20 years and 30-40 years. The research consisted of sensory analysis (threshold test, hedonic rating test, and descriptive test) and consumption experience. The threshold test used 5 levels of red dye concentration, 5 levels of purple dye concentration, and 5 levels of fruit flavor concentration. The hedonic rating and descriptive test uses 2 colors with 4 fruit-flavors on each jelly candy color. The consumption experience examined is related to social media and consumption locations (restaurant/cafe), as well as regarding consumption of jelly candy. From the results of threshold test obtained a concentration of red dye is 0.45 grams/kg, concentration of purple dye is 0.68 grams/kg, and fruit-flavoring 3.00 grams/kg. From the results of the hedonic test, panelists aged 17-20 years and 30-40 years preferred red jelly candy (with flavored melon in flavor attributes and flavored lemon in overall attributes) and purple jelly candy with flavored melon in flavor and overall attributes. While from the results of descriptive test, panelists aged 17-20 years can distinguish flavors from red and purple jelly candies (except purple-strawberries and purple-lemons) compared to panelists aged 30-40 years. The level of preference on panelists aged 17-20 years and 30-40 years is influenced by the interest in products and innovations, social media, frequency of going to restaurants/cafes and advertisements. From the results of the flavor description test, panelists aged 17-20 years and ages 30-40 years are influenced by sensitivity of flavor, interest in products and innovations, and the frequency going to a restaurant/cafe. The conclusion of this reasearch is that panelists two aged group like jelly candy with a different flavor from the color, panelists aged 17-20 years can describe the flavor of jelly candy in different color, and internal and external factor of panelists aged 17-20 years and 30-40 years affects the acceptance of panelists in consuming jelly candies with color deviations.
