Abstract

The consumption pattern of people in the present is beginning to irregularities, not paying enough attention to the adequacy of energy and nutrition and more concerned with eating full. The government's response to this reality resulted in a new decision that was included in the balanced nutrition guidelines, one of which was related to protein fulfillment, the minimum fulfillment of animal protein by 30% of the total protein intake a day. Protein intake is very necessary for cell regeneration needs and tissue in the human body, especially for a patient. Inpatients are one of the targets of hospitals in implementing health services in the community. So that in this study we will observe and evaluate the differences in the amount of consumption or the acceptability of the patient's protein at the antarmenu, between classes, and between types of food supply. The chosen sample was inpatients with normal diets who had LOS (Length of Stay) or a minimum length of stay of 3 days in each sample hospital (RS 'A' and 'B'). Sample at the Hospital ‘A’ were 5 selected respondents and at ‘B’ Hospital were 3 selected respondents in each inpatient class, so that the total data will be obtained as much as 20 and 12 per day. Direct observation is carried out in 12 days divided into 4 time visits with different observation dates. This research began by taking the remaining food samples of patients with the comstock system in four food components including staple foods, vegetables, vegetable dishes and animal dishes. Comstock used has five scale levels (%): 0; 25; 50; 75; and 100. Furthermore, the comstock value will be continued with the consumed portion value then converted into units of grams by multiplying by the protein weight of each food ingredient in each menu. Data on protein consumption per food component in grams per day were then formulated into consumption of vegetable and animal protein. The consumption of vegetable protein is the total summation of consumption of staple foods, vegetables, and vegetable dishes, while vegetable protein is only an animal side dish. The average value of supply and consumption of protein in both 'A' and 'B' hospitals has met the standard of fulfilling 30% of animal protein, but a menu correction and balance is still needed to make it evenly distributed on all menus. Protein consumption between types of food has a different acceptability also in animal protein. The difference in patient's acceptance of food in the hospital can be influenced by the patient's eating habits, the taste and quality of the hospital's food, the characteristics of the food served, and the environment of the hospital in question. Efforts that can be made by the hospital to increase patient acceptance such as modify the shape and processing of food ingredients, provide food that is more diverse, and do not repeat the menu too often.
