Abstract

Coastal pollution, directly or indirectly, will pose food safety risk particularly wIth regard to seafood harvested from the area. Cockles, Anadara granosa is commercialiy important and popular seafood in Asia. As a filter feeder organism, cockles have a high potential in accumulating pollutants, including trace metals. Numerous studies on metals accumulation in seafood organisms, including coastal bivalves have been documented. Until recently, however, no study has been done on the relationship between metals accumulation and microbial diversity in the tissue of coastal bivalve.:;. The objective of this study is to determine lead (Pb) and cadmium (Cd) contents, biomass reduction, microbial composition of cockles A. granosa of several size categories from two locations at north coast of Central Java (Semarang and Kendai). Samples from each location were subdivided into five groups based on shell length. For the purpose of observation samples wcre-separeted inte-;two~. One part was used for measurements of metals. The other part was kept in reffigeraror with temperature of 5 - 10°C and subjected to measurements of microbial composition, 6i~mass reduction of tissue, pH and observation of physical appearances of. the tissue ouring storage. The level of Pb and Cd in A. granosa from Semarang and Kendal have bbth exceeded the permissible levels. The highest coneentration o('Pb and Cd are 3.7 pp 27.2 ppm and 11.6 ppm, 17.5 ppm for cockles (fom Semarang Itld Kendal respectively. There was a significant differences in ecomposition rate ({><Q,OS) between ~ockles from different locations. On the contra , no significant ~iff¢renees in biomass reductip, nwas found between size. Cockles rom Semarang have a higher microbial diversity tm those from Kendal. Results of m'c obiological identification showed that genus ap species of bacteria and fungi 'nclude Pseudomonas. Serra/ill, Haiomonas, ~scherichia, Erythrobacter. Coryne cterium. Flavobacterium. Mari omonas. Lactobacillus. Enlerobacler and Aspe gil/us terreur;;. Penicillium GorylophylUim respectively. Microbial density in A. gl'anosa from two locations have been exceeded the consumption safety standard. ased on the microbial density and t eir respective metals contents cockles from Semar: g an Kendal can e clas ified as unsafe for consumption.
