Abstract

Kerupuk udang merupakan produk pangan yang mempunyai umur simpan relatif singkat. Proses penyimpanan kerupuk udang ini akan menimnbulkan masalah seperti menurunnya tingkat kerenyahan (melempem). Setiap bahan pangan memiliki survival yang berbeda-beda dengan laju kerusakan masing-masing. Penelitian ini bertujuan untuk memilih model survival berbasis distribusi statistik yang sesuai untuk menggambbakan kerusakan kerupuk udang dengan berbagai perlakuan pengemasan.
