Abstract

Supermarkets are the development of traditional markets that have longer opening hours than traditional markets, so the supermarket is very concerned with the handling and quality of the products sold one of them is fresh fruit. Papaya california is one of the local fruits that are easily found in the market and supermarket because it is not a seasonal fruit and also contains many nutrients. Papaya is also a klimaterik that has thin skin so that it is easily damaged physically or chemically. Good Handling Practices (GHP) is a guideline that explains how to post harvest of good agricultural products to produce quality food, safe and worth consuming. The purpose of this research is to know the handling of fruit in the two large supermarkets (Gelael and Giant) and to know the physical characteristics and chemical characteristics of fresh papaya fruit and papaya that is considered unworthy Sell. This research is done by Interview directly with the target of respondents who are responsible for handling fruit especially the type of fruit chosen. New california papaya fruit and california papaya fruit that has not been worth selling from each supermarket is conducted physical analysis of color and texture analysis, and conducted chemical analysis is analysis of water content and sugar content. The results of the study showed that the handling of after the harvest in two supermarkets to have influence on the quality of the quality of fruit of the Papaw California. The handling of the two selected supermarkets starts from the reception process, physical checking, display, and sorting process. Gelael Supermarket provides better handling than Giant, resulting in California papaya fruit that has better quality and longer display life.
