Abstract

Bit merah adalah sayuran berumbi yang memiliki banyak keungulan yakni memiliki nutrisi dan antioksidan tinggi. Bit merah instan adalah bit merah yang telah dikeringkan, kemudian pengkonsumsiannya dapat dilakukan secara mudah dan cepat saji melalui proses rehidrasi. Prinsip pengeringan dilakukan dengan menggunakan alat dehumidifier hingga dicapai kadar air mendekati ± 5 %.Tujuan penelitian ini adalah untuk menganalisa efek penambahan drying agents sodium metabisulfit, asam sitrat dan asam askorbat pada kualitas bit merah instan.
