Abstract
Studi yang dilakukan dalam penelitian ini, mengidentifikasi bahaya yang timbul dengan pendekatan HACCP, didapatkan bahwa ditem~an adanya mikrobia patogen dalam setiap tahapan proses produksi. Dalam penerapan metoda HACCP diperlukan 4 tahapan proses yang perlu dilakukan, pertama mengenai analisa bahaya bcnlpa mikroorganislne. Di identifikasi kandungan E. coli sebesar 2,23- 1,23.107 dalam air swnur maupun air PDAM yang digunakan. Dalam proses bersih pula.
