Abstract
Durian fruit is a fruit that comes from Southeast Asia which is included in the category of tropical plants. The name of the durian fruit itself is taken from the characteristics of the durian fruit which is sharp and hard like thorns. However, this fruit has a popular name, namely "king of fruit" ( king of fruit ). The city of Bengkulu is one of the cities that produces durian fruit, where in general the durian fruit is only used for the flesh of the fruit to produce various types of processed food or made as regional specialties. Apart from being sold in fresh durian fruit units, this durian fruit is sometimes processed into lunkhead, tempoyak, lempuk or other preparations. but durian seeds are generally only thrown away and used as fertilizer. Even though durian seeds have the potential to be used as processed food. Fruit waste is still of little interest to industry players, but this waste can be used as raw material for the manufacture of several food products, so that this waste can be optimized as a business opportunity. So with this in mind, the authors take advantage of the leftover durian fruit to be processed into food products that can be used more widely and can be marketed into a product, namely CO.JIDU. the method used in this research is to use the business plan .
