Abstract

Culinary business competition in the city of Semarang is increasing, indirectly resulting in tighter culinary business competition. So restaurants as a form of culinary business must have a competitive advantage in order to compete in the midst of culinary business competition. In order to be able to compete and survive, a restaurant as an organization engaged in the provision of food and beverages needs to have and build a strong organizational culture as one of the strategies in developing human resource management. The aim of the research is to find out what the current and expected organizational culture is. The measurement process in this research uses the Organizational Culture Assessment Instrument or OCAI method. Researchers chose Just Snack Resto as the object of this study. There were 13 respondents in this study, all of whom were just snack restaurant employees. The results of this research indicate that the current and expected organizational culture based on just snack employee perceptions is clan culture. Through this research, the researcher suggests that should be more activities to increase the sense of kinship and mutual cooperation among employees which has become an organizational culture from just snacks. Keywords: OCAI, organizational culture, culinary business Persaingan bisnis kuliner di kota semarang yang semakin meningkat, secara tidak langsung mengakibatkan persaingan bisnis kuliner semakin ketat. Maka restoran sebagai salah satu bentuk dari bisnis kuliner harus memiliki keunggulan kompetitif agar dapat bersaing di tengah persaingan bisnis kuliner. Agar dapat bersaing dan bertahan, maka restoran sebagai sebuah organisasi yang bergerak dibidang penyedia makanan dan minuman perlu memiliki dan membangun budaya organisasi yang kuat sebagai salah satu strategi dalam mengembangkan manajemen sumber daya manusia. Tujuan dari penelitian adalah untuk mengetahui apa budaya organisasi yang dirasakan saat ini dan yang diharapkan. Proses pengukuran dalam penelitian ini menggunakan metode Organizational Culture Assessment Instrument atau OCAI. Peneliti memilih Just Snack Resto sebagai objek penelitian ini. Responden penelitian ini berjumlah 13 orang dimana semua adalah karyawan just snack resto. Hasil dari penelitian ini menunjukan bahwa budaya organisasi saat ini dan yang diharapkan berdasarkan persepsi karyawan just snack adalah budaya clan. Melalui penelitian ini, peneliti memberikan saran bahwa perlu adanya kegiatan-kegiatan untuk meningkatkan rasa kekeluargaan dan gotong royong antar karyawan yang memang sudah menjadi budaya organisasi dari just snack.
