Abstract
Fish Consumption Rate (AKI) in Kendal Regency which is one of the centers of fishproducing systems in Central Java but the level of fish consumption is only 17, 96 kg / cap / year. The data on fish consumption figures as a result of SUSENAS (2017) only measure the level of household consumption, and the level of consumption outside the household has not been calculated. One type of informal business sector that provides food for fish outside the household is a food stall. Calculation of the level of fish consumption is difficult because there is no data on the population of the food stall business actors. This research was conducted with the aim to predict the food stall population, calculate the level of fish consumption, and analyze factors that influence the level of fish consumption. Survey of fish consumption level would be conducted in food stalls in 9 sub-districts which are divided into three regions based on height and urbanity, during January-March 2019 and are only visited once with the "three-day recall" technique on the type, amount and method of fish processing. Based on the results of research on fish consumption levels by region it is known that the population of food stalls in the eastern region is as much as 396, in the central region as much as 205, and in the western region as much as 227. Fish consumption is highest in the eastern region, followed by the middle region, and the lowest in the western region with consumption levels of 9.076,64 kg / stall / year, 8.879,63 kg / stall / year, and 8.498,81 kg / stall / year. Based on the results of the study it is also known that the most consumed types of preparations are types of fried and balado preparations. In fresh species and preserved fish, the most consumed are fish from freshwater in the western region. In the type of shrimp and other fresh water animals most consumed are shrimp and aquatic animals originating from marine waters in the eastern region. In the type of processed food and fish-based side dishes, the highest consumption of fish is from marine waters and in the western region. The most consumed spices from marine waters are 248.33 kg / stall / year in the eastern region. Overall the level of fish consumption in Kendal Regency is 16,319,785.43 kg / cap / year. The level of fish consumption in food stalls is not influenced by consumer socioeconomic factors
