Abstract
Soursop plant (Annona muricata) is one of the fruit plants that can grow in Indonesia. Most people only know soursop plants for its fruit. Along with the development of technology and researches, people can now know that an other part of soursop such as leaves can also be used for health. Soursop leaves contain many antioxidant compounds such as flavonoids, triterpenoids, phenolics, cardiac glycosides, and reducing sugars. Soursop leaves also contain other compounds that are useful to treat certain diseases. Other compounds contained in soursop leaves are acetogenins, annocatacin, annocatalin, annohexocin, annoanacin, annomuricin, and anonol. Dried soursop leaves can be used ingredient of herbal drinking. Drying process for fresh leaves has a purpose to reduce the water content of soursop leaves. High water content in food will facilitate the growth of microorganisms and chemical damage such as oxidation. Different drying methods are expected to have different effects on dried products both positively and negatively. The positive effect that can be produced are that the shelf life of the product becomes longer and easier to distribute. But the negative ones are decreased chemical and physical properties of products such as a decrease in antioxidant activity, total phenolics and a decrease in color of soursop leaves. The objective of this study is to determine the effect of the methods of cabinet dyring, portable cabinet drying, solar tunnel drying, solar tunnel drying modification on moisture content, water activity, antioxidant activity, phenol total and color on soursop leaves. The results show that drying its the best water content pf dried leave was the cabinet drying, the best water activity of was the solar tunnel drying, the best antioxidant activity of was the modification of solar tunnel drying, total phenol solar portable drying and the best intensity of was cabinet drying. The conclusion of this study is the drying method of cabinet drying has made the leaves a brighter color compared to the three other drying methods.
