Abstract
Cabbage, a well-known vegetable, is continuously available at reasonable price, has high nutrition value, and easy to be processed. However, this has a long supply chain from farm to table, which might affect to the quality changes. The chain involves many actors, including farmers, wholesalers, transporters, retailers and end-consumers, and each has own quality perception on cabbage. This paper describes the cabbage handling practices, changes of quality, and quality perception along the chain, from harvesting at the farming area of Darum, Bandungan until retailers at the traditional market of Kanjengan, Semarang, by interviewing actors involved and quality assessment on some physical attributes, such as uniformity, compactness, color, hardness, weight loss, and water content of cabbages in each stage of the chain. Results indicate that there is an opportunity to increase the quality of cabbage by good handling practices along the supply chain. This includes the orientation of actors toward quality control with clear quality indicators supported by the harmonization of quality perception between actors.
