Abstract

Udang merupakan salah satu hasil perikanan yang banyak dikonsumsi oleh manusia. salah satu udang yang banyak diminati untuk dikonsumsi yaitu Udang Windu (Penaeus monodon).penelitian ini bertujuan untuk mengetahui pengaruh cemaran logam berat (Pb,Cu,Zn,Cd,Fe) dan cemaran bakteri fecal coliform pada udang windu (Penaeus monodon) dari pantai demak,dan laju kerusakan udang selama masa penyimpanan berdasarkan perubahan kadar air,total volatile base (TVB),trimetilamin,total plate count,dan fecal coliform.
